Apple Pancakes - simple and delicious

for 2 servings:
0,5 cup of self raising flour
0.5 cup of milk
pinch of salt
0.5 tea spoon of baking powder
2 apples ( best are sour apples such as bramleys)
These are two of my favourite oils for frying.
Both of them have high smoke point and for me it means no smell of burning oil!
However you can use any oils you like.
Prepare the pancake mixture by combining all ingredients together in large bowl.
Put the mixture to the fridge for 30 minutes.
Peel the apples, then cut them in very fine,thin disks, core.
Warm up the frying pan, and add oil to cover the surface.
Warm the oil up.
Dip the apple disks in the pancake mixture and place it on the hot frying pan.
Fry on both sides until golden brown.
Place the freshly fried apple pancakes on paper kitchen towel to remove excess of oil.
Serve warm, dusted with icing sugar, a spoon of natural yogurt and drizzle of honey.
Apple pancakes taste best dusted with icing sugar, a spoon of natural yougurt and drizzle of natural honey. Alternatively, you can serve it with touch of chocolate souce or lemon curd and whipped cream, marple or golden syrup.
